Elderberry Gummy Bears

Hi everyone! Due to the amount of messages that I got on Instagram about my gummy bears I decided to share the recipe here. To make these gummies, you’ll need to make homemade elderberry syrup first, it's easy don't worry.
I tried many flavors for the gummies (as many of you saw on my stories), but I ended up coming back to this recipe because of all the benefits of the Elderberry.
Elderberries are talked about so much during the cold season because they are filled with antioxidants. Antioxidants help your body fight off free radicals which are things that come from the environment that can cause sickness in your body. The more antioxidants you consume, the better you are able to fight them off and hopefully stay healthy! First, you'll make the elderberry syrup and once that's ready you'll add the gelatin.
Ingredients:
3½ cups water
2/3 cup dried elderberries (I get mine from the local health store and the coop)
1/2 cup raw honey (or less depending how sweet you like them)
5 spoons of high-quality gelatin
Instructions:
Pour the water into a medium saucepan and add the elderberries
Bring to a boil and then uncover and reduce to a simmer for about 30 to 45 minutes until the liquid has reduced by almost half.
Remove from heat and let cool until it's lukewarm.
Mash the berries carefully using a spoon or other flat utensil.
Pour through a strainer into a bowl. Discard the elderberries.
When the liquid is no longer hot, add the honey and stir well.
Right after the honey add the gelatin and stir until the granules are dissolved.
Pour into your molds and when it's room temperature put in the fridge.
That's it!
And in an hour or so the gummies will be ready to eat, I like to store mine in empty Bonne Mamman jars, I also keep them in the fridge. I've read that they keep for about two weeks but they only last a few days at home so I can't say much on that regard.
